hey guys got some free time today beside me working like a dog i got a bit of time to write some ramblings on this site that I have done in a while so here I go typing away on this site.
While I will rant today about a restaurant ( big food company) Jack Astor’s on young and bloor just above the subway. The many times I been there I had no complaints great service and food and then a couple of months ago it seem to go downhill for me I guess we a great sever (not) he was bad I understand they polices in sharing the work load and what not but this guy never came to us at all until it was time to get the bill and his tip he didn’t take a drink order or our food order and I do understand that its was busy but if he couldn’t take us he should have gotten a new sever who was less busy. its one to get a drinks take by the one sever but our food should have been taken by the sever that was told to us.

what was worst , I spoke with the manager after and she was no help and the guy was a douche all I get for crappy sever and serves was how it was my fault that I didn’t understand store policies and a coupon that it expired free appetizers on July 1 never going to that place.

this month I went to another Jack Astor’s at Dundas square the severs were great very helpful and nice and we had the same sever the whole time and they were super busy. I don’t get it, big restaurant chain they polices should be all the same but they are not, I will continue to go to jack’s but, I am not going to their location on Young and bloor for a while.

Ok, so what a 4 long month it was for me and the other guys in the restaurant I work at, my chef the guy , lets name him Q. Didn’t like his staff because we weren’t his colour, this type, and weaker than him. My chef Q, had great ideas but no great management skills to save his life on. He under scheduled people and yet the guy he though I was weaker (my nice personality) then him, I proved time and time again that he really didn’t listen to people who knew this restaurant and how demanding it is.

And once the fright train start it very hard to stop it( aka me).

So let go back to how I thought this dude and was so going to help bring back “Fire” to a busy place it once was. Now don’t get me wrong maybe he been over whelmed by the amount of work this tiny kitchen does and the amount of products it pumps out but people come back over because of it. Maybe he was blind and just need a job to look good for some résumé. Who knows, but something switch off for him and he stopped caring.

We were all blinded by the fact that he was “good” something smelt like fudge, but not the good kind. After that big clean and the disaster on New Years Eve, then just the array of bull shit that just told me to keep my guard up. One thing that made me wonder his of plans was that fact that he was bring people right away not even a week in to the restaurant flooding the place with people hope for people to leave and replace them with not so great people. Now don’t get me wrong we gained some really good guys and they are excellent so we are keeping them but some have to go not sure when and some people are coming back which is good.

New Year New chef ….. and other things

Ok so its been … I like to start by saying it been a crazy end to the year and crazy start to the year as well. So where do I begin, well my old chef decide to give up and I understand that it was working for him anymore but he was there for a year and a bit. There was drama but there was order too and it was good. Everyone was kinda happy but improvements were much-needed. So new chefs were coming in to have interviews many came but some were what it took until this chef came in and what we thought was good different and we what needed was a changed. Boy where we in for a changed indeed.

Now don’t get me wrong things in the kitchen needed change and cleaned and it happened and it was good but it was still disorganized Things didn’t look good for the new chef but things now are looking up so lets see what going to happen in this new year.

So I now have my website its http://liberationbaker.com this is my new website that is focusing on my baking fun stuff on that site where as I will still be using this blog and the other for cooking more so…

Also I have gotten a second job working in something completely different but still in cooking its been about 7 months I think or less that I have worked there the restaurant concept is molecular gastronomy. I’m assisting the Pastry Chef/ Ower it so cool. Learning new things getting better at doing desserts. Will post pictures of the work their and will also give the name of the restaurant everyone should check it out.

Hey guys, been a while since I updated my blog but i am here again writing again. So I have been loving this weather in Toronto, it has been nice for the last two weeks and just going though the city the creative has been pumping and thing in my life have been getting better but I have been trying to work on desserts and going into that more and more lately. Now I have not gone to school for pastry but I like it some cakes have flop but I have found great ways to fix most flops which is really good. Anyhoo I am going to go and gets some inspiration.
